Sambar – pitta balancing
SAMBAR – PITTA BALANCING
Sambar is one of the dishes many people remember from their visits in India. It is often served with dosa or as a part of thali meal.
This recipe is to balance pitta. For kapha balancing sambar click here. Make sure you chose the right ingredients for your PDE. If you need more sauce add an additional cup of water when cooking the vegetables.
This version of sambar is good for children.

½ cup yellow peas
4 potatoes
5 asparagus
1 zucchini
1 green capsicum
1 yellow capsicum
11 haricots verts
2 tbsp coconut oil
1 cup water
4 tbsp shredded coconut
2 tsp coriander powder
1 tsp turmeric powder
salt
¼ cup chopped fresh parsley
Soak the yellow peas overnight and boil until very soft. Pour out excess water and set aside.
Wash and cut the vegetables (asparagus and haricot verts 1 ½ inch length and the other vegetables in 1½ inch cubes).
In a heated pan add 1 tablespoon oil and vegetables. Stir on high heat for 3 minutes.
Add 1 cup of water and cook on medium heat under lid until the vegetables are cooked.
Stir in the cooked yellow peas, lower the heat and let simmer under the lid for 2 more minutes.
In a small frying pan add ½ tablespoon of oil, shredded coconut and coriander powder and stir for 1 minute. Switch of the stove and add turmeric powder and stir.
Add the coconut mix to the vegetables and stir.
Add salt for taste and garnish with the chopped parsley.
